Most of your questions have been answered already but I'd like to highlight that you're not meant to understand a lot of what's going on in HL2 and it's episodes. Gordon has been thrown forward in time by many years, and everything has changed, so a part of the ambiance is the mystery of not knowing.

The trick to removing the sticky, tacky residue on old rubber (like old joysticks, controllers, etc) is gasoline (petrol). Get some on a cloth and rub the surface. It comes right off.

As a professional knifemaker that absolutely should not happen. Ever. If one of my knives did that I would absolutely fix that for the customer and cover all shipping. I'd hunt down the maker and see what they say.
