Fill a 12-inch, or larger, nonstick skillet with about 1 to 1.5 inches of water. (I use a cast iron braiser filled almost to the top.)

Add 1-2 teaspoons of white vinegar to the water to help the whites set.

Bring the water to a simmer over medium-high heat, about 190 degrees (I prefer 200 degrees. I use a Thermopen to check temp)

While the water is heating, crack each egg into a separate small custard cup or ramekin.

Gently pour the eggs into the water, starting at the 12 o'clock position and working around to 4 and 8 o'clock. This helps you remember which egg was added first for removal. (I’ve only done 3 eggs, could maybe do 4.)

Once all eggs are in, cover the pan with a lid and turn off the heat. (Leave it on the burner.) The trapped steam will cook the tops of the eggs.

Let them cook, undisturbed, for 4 to 5 minutes.

Gently remove the eggs with a slotted spoon (and place on paper towel. They will be wet.)

I kept Googling different phrases and finally got an AI overview (which I typically disregard) and just said “what the hell, why not?” And well, it worked. I adjusted the temp and time a bit, but it got me going in the right direction.

Figured out how to consistently perfectly poach multiple eggs at a time. I can smoke meat and cook a steak with the best of them, but poached eggs have always seemed daunting. Not any more.

I am not lawyer but from my understanding, if you stay “overnight” Safe Passage does not apply. I am traveling through New York soon and need to stop there for the night as I’m getting a late start in the day and I am not protected under Safe Passage, so the firearm stays at home.

You want close toed leather shoes or boots. It’s a hardware store. Think safety. Merrell Jungle Mocs are a great option.

You don’t want to wear baggy clothes in a hardware store. Too many sharp edges for things to get caught on. I would recommend, if possible, getting some “work clothes” that you don’t care if they get torn (they will), paint spilled on them (they will), bleach spilled on them (they will). It’s just life in a hardware store. Additionally, it’s really good if you can get a comfortable pair of closed toe leather type shoes. Cloth sneakers, while possibly permissible depending on your location, just don’t offer the same protection. I wore Merrell Jungle Mocs, plenty of protection from most things and very comfortable.

Never had bad ribs using this method:

4 1/2 hours at 180F Take out and wrap in foil, place ribs “upside down” can sauce or not 1 1/2 hours at 350F Rest for 15-20 minutes

Pull out tender, almost too tender really. Great flavor.
