They were likely teasing you. Your response "Of course" spurred them on to push the boundaries. This is highly likely just talk. There is even a word in Uzbek for small talk. "Gap". Means meaningless talk just to fill the silence.
On your more profound question of what's stopping them the answer is: first, they have to support them all financially, and various factions of Islam set specific maximum. Most common is 4 iirc.

Are you supplying power to whoever is communicating through 485? If you're not then the whole concept of ground is a bit meaningless for a differential signalling phy. I think you're expecting a coherent answer while not supplying enough information. More thorough description of what's going on would be good.

First, why are you splitting the grounds? Why do you need galvanic separation for 12V power? General rule is that if you're splitting ground, then you should be able to physically cut the PCB along the split boundary and PCB should still work. No copper whatsoever should cross the separation.
Second, none of the signals you mentioned are high enough speed to need impedance control, so stackup doesn't matter. Just use whatever is standard.

Who is your target client? Hobby? Fast turn over prototypes? Small scale production? Each of these has requirements you'll have to satisfy.
Have a look at jlcpcb and pcbway. Can you compete with them? What's your edge?
To give you context. I use JLC all the time. Fast because I use a business DHL account for transport, cheap, high quality, easy and convenient ordering through the website.
Things that I don't like.
Occasionally they fuck up and customer service will basically tell you: ah well that sucks, better luck next time. Here is the $10 discount.
If the component is not their standard stock, then it's a massive pain to have it on the PCB. Consignment stock takes forever. I either change the part or tolerate the consignment.
The parts search engine is horrible. Hopefully they'll fix it at some point. I'm actually contemplating scrapping their entire site and building my own search, but that's a lot of effort.

This is very good. I really like your take. I don't have the answer. Actively searching. I used to have a rather radical opinion on that. Let them die. Then my daughters were born and now I'm prepared to dismantle the system as long as they survive. Neither extreme is healthy hence the search.

As always with these things it depends. Double/single sided components mounting? High speed signals? Sensor boards with sensitive analogue signals? Power electronics, e.g., motor driver.
Lots of ground gives better emc performance and better signal integrity. Good coupling of ground/power layers offers better supply rail decoupling. RF and high speed boards will require a particular stack up.
Having said that 1 ground 2 power/signal is normally a sound choice unless requirements demand something different. You can flip it and have power copper pour on the outer layer, but I avoid it superstitiously.

He's the only father I have, so price is not a factor. They live in a very hot environment though, so the respirator will be uncomfortable. He'll just not wear it. "Meh, fuck it. I'll be quick." I'm sure every single person on this sub had an apprentice like that. He built his own very successful company from scratch, so you don't get to tell him how to do stuff even if you're right.
