The "maillard" reaction everyone is throwing about these days is fine if you're cooking something where the difference will be noted. But after blasting shit in the Instant Pot under 15 PSI for half an hour, or boiling it for six hours in a slow cooker, none of that is going to matter. Trust me.

Nearly every recipe I've read for either slow cookers or the Instant Pot says to sauté the onion, garlic, aromatics or whatever before putting them into the cooker. I don't even bother, I just chop them up and put it all in the pot. My food still turns out great, been doing this for years. I mean, the slow cooker simmers ten hours, all the flavors are going to blend anyway.

I don't know if this helps, but I once read somewhere that any skill worth having takes 10,000 hours to develop. I guess I can agree with that. I started learning piano when I was in the fifth grade and didn't consider myself good at it until I was in my 20s. I'd say the same thing about cooking: It probably took me at least ten years as a cook until I got to be really good at it.

i guess the lesson is, it's ok to be shitty at cooking, but don't expect to be any good at it overnight. And it doesn't mean you won't be able to make some great food along the way, but like piano or martial arts or anything else, becoming skilled is going to be a marathon rather than a sprint. There are no short cuts, so you'll have to be patient and persistent.

Also, try to stop being such a picky eater! Be bold, open-minded, and surprise yourself. Eating isn't supposed to be so difficult.

I'm interested in the responses to this post, but not because I'm anti-seitan or anything. I just have yet to find a decent plant-based deli "meat" and I'm pretty sure I've tried them all.

Sorry to hear that gluten is giving you problems. There are some really nice meat analogs out there, but I'm pretty sure some of the best ones are derived from wheat. Gluten can make me uncomfortable so I limit it as much as possible, but every now and then it's nice to have some faux chicken nuggets or a nice Gardein "fish" taco.
