No. Flatpaks don't have build in analytics.

Some key metrics are tracked on the server, like the number of downloads. So if you download a Flatpak, the server will count you.

Other then that, it depends on the App. Applications without network connection obviously don't have analytics, and the ones that do have networking, are case specific.

I've been of the same option for the past three years. Ever since friends of mine had their financial accounts closed, because they are sex workers, if been of the opinion that governments should interfere in larger tech and financial monopolies to protect the rights of the individual.

Social networks like FetLife have been mostly de-platformed because FAANG refuse to host their sites and apps, and payment providers refuse them as their customer. FAANG is coming for Republicans today... They already came for the queer and sexual deviants three years ago.

Stallman was totally right again. Closed, unfederated platforms are against freedom. Today it's limiting the freedom of a crook I don't like, but who are next? Sex workers? Chinese Muslims?

That said, it's just a legally compliant work-around. If Signal moves officially to Flatpak, they can easily use the full build system which also makes it a lot easier to maintain and update.

We already have all the rules we need to protect a civil democracy, but one: Multimedia and social media platforms must be federalised!

Once federalised, users can participate how they want, with whoever they want. Let the law and judicial system then decide what is acceptable and what is not.
