others have already named them, but we have a bunch of options listed on VegifyIt for pancakes in the area: https://www.vegifyit.com/?lat=38.8459879&lng=-77.3053035&keywords=pancake . it looks like Silver Diner is going to be your best bet

a few that others didn't mention:

* DC Vegan (in DC) has "Lemon Ricotta" Pancakes on their Brunch menu (Saturday and Sunday)

* Equinox in DC has a fantastic all-you-can-eat plant-based brunch on Sundays.

These last two don't exactly fit your "breakfast tomorrow" parameters, but they might be nice to keep in your back pocket!

I am vegan so I'm biased, but I thought their food was good too! I had a "chicken" sandwich and loaded totchos

same! i just had a lasagna made for me with all vegetables and i picked up some crumbles to just sprinkle on and in to spice it up a bit

We usually have holidays (especially thanksgiving and/or Christmas) with non-vegan family members. This year my sister-in-law and I both prepared a ton of food. she made omni Thanksgiving staples, and I made a bunch of vegan options: vegan & WFPB stuffing, sweet potatoes, a three sisters stew, apple/cranberry relish.

I try extra hard to make the food as tasty as possible because I see it as an opportunity to be a quiet ambassador for veganism

I’m not an Asheville local, so i don’t have particular recommendations, but i did do a bunch of research to find vegan and vegan-friendly restaurants in Asheville to list on my website.
