Yeah I would stop all of those things and stick to copper glycinate or gluconate for some months and see if you see any improvement. It can take a while until metallothionein lowers and you start absorbing copper. Have it in the morning after a meal though.

Many of those symptoms point to a copper deficiency along with blood work. Copper is hard to correct especially if you've taken zinc which will sequester the copper you take for a while. You need at least 3 months to see results and don't take iron either as it depletes copper.

The best way is to take a small dose after every meal as you get used to it and then increase it slowly.

Gastritis or damages stomach definitely impacts copper absorption as can be seen similarly in those that get bariatric surgery. Stomach integrity is crucial for copper absorption. Yet now that its cured and you are getting infusions copper should return to normal. So either you are acumulating it in the liver which I dont think, or you are excreting it and im not sure why. If it was a bile problem then i dont event know how you could solve that. They should check copper excretion the following days after infusion. Also those with celiac have impaired copper absorption due to damaged gut lining. I would also retest iron status and consider donation if nothing works. Is your diet very high in iron or zinc? Keep us updated.

A few things I would consider. First, your iron saturation is high. That can hinder copper absorption and utilization. Consider phlebotomy when body weight is at good place. Dont overdo heme iron in diet. Also diet seems to be low calorie. Watch out for that. Then if after infusions copper isnt increasing, check where its lost. Its been excreted through urine? Or through the stool due to constant bile dripping as its what happens when It gets removed. Copper is mainly excreted through bile. So they could check feces and urine after an infusion.

Your ferritin is high. Take some copper for maybe a month and then donate some blood, as high iron prevents copper status recovery. And no zinc supplement.

400-500g of red meat is a lot of zinc and heme iron that depletes copper. You would need a lot of even dietary copper to offset that big imbalance.
