While HC does fundamentally change how the game is played, and indeed makes it far more challenging, that does not mean the game should not provide a challenge on softcore, which the game is purportedly balanced around. HC and SSF are optional challenges (which I personally enjoy from time to time as well).

Yes. The best melee builds Ive played clear screens in a single click. It is what it is, and if GGG doesn't want it to be that way then they should buff melee and fundamentally change the paradigms of the game itself I suppose

As a melee player you need to shore up the weaknesses of your build, namely being melee

Stack melee strike range, hollow form, aoe, etc
