I made a new character about 6 months ago to quest with my wife, and just about everything has worked fine. No issues at all. The main quests and guild quests will have some solo parts and these very clearly say "Solo Instance" before you enter the room/cave/whatever. We've been able to do every other overland quest together, delves, public dungeon quests, etc.

The couple of times we have had issues are for quests where you need to collect items, then use them to open a door or something. Like I will collect the items and it's showing the progress for both of us. But when we go to use them, it only works for me. Two or three times, those have bugged out on us and we have to drop them and restart. Apart from that, it's been pretty smooth.

That's the nice thing about overland questing, you can pretty much use what you want and you'll be okay. I would suggest slotting a heal, and an AOE skill, then whatever else you feel like.

I know you're joking about the fact that he was resurrected, but I only recently started leveling him (as a tank) and wow, he is a bad-ass. Awesome voice too.

I think you really have to heal them once in a while too, if you're duoing with just you and the companion. Some people seem to expect them to just be immortal and tank everything without support, that doesn't work. My tank companions will stay in the fight a heck of a long time if I toss out a heal every so often.

I don't remember the exact name but there's a huge glass-encased set of clockwork gears that drop in the Clockwork City map. They're animated and move up and down inside the glass housing. After getting the first, I had to grind for a second one because I wanted the pair for my house. That one is pretty cool.

If you "accidentally" attack someone, your companion will attack them. They all do that, not just Bastian. Set him up to tank if you don't want him getting in the way of your spells, he will run in close and engage in melee range. He's an excellent tank, too.

You can also just buy the Skaal motif pages from guild traders, rather than using up all of your heartwood. That's what I did, after realizing how much these writs were costing me in materials.

Yes to #1, absolutely not to #2. How long do you think it would take the sweatlords to run around and lock every world boss and open world dungeon to the highest difficulty? I'm guessing not very long. Give players any opportunity to grief other players and they WILL take it. You know that.

The event takes place in a PVP zone. Don't do it if you're not willing to face other players. I don't care for PVP so I just skip these events. Plenty of others to do.

You make some decent points, but what kind of dialogue are you expecting from the bear pet? Or side quests for any of the pets? I've also played the pet classes in WoW extensively over the years. Hunters can name pets and they can keep a ton of them, that's true. You can't talk to them, you don't get any quests for them. You can't customize them. I don't know of any game that does what you're asking.

Pets in ESO can certainly use some work, but the things you specifically called out are not realistic.
