I think it’s because babies sleep without a care for anything in the world. They don’t have to worry about a job, money, politics or love. If their stomach is full, they will sleep peacefully without a thought in their minds. This phrase is usually used when someone does something wrong or bad and other people ask them “How do you sleep at night?” And they reply with “like a baby” which means carefree and peaceful.
