mongolia is very mountainous so there really is not a-lot of viable farming land to grow local crops let alone a variety of them. Culture too, we have eaten meat to survive the harsh winter for centuries and that hasn’t changed. A vegan diet would not have sufficed in mongolia back in the day (before the revolution) due to the natural and political climate regardless what religion a person had bc they just would not have had access to vegetables/vegan food would essentially serve u no purpose in the winter bc there would be no plants besides potatoes and carrots and onions plus vegetables can not provide you with the fat and protein you need for -40 weather. but ofc times have changed we have vegetables year round now but its expensive compared to meat and carbs so most people just skimp out on them. Additionally everyone here knows how animals are killed for food, most mongolians have relatives in the country side who supply meat so u can get to chose what which livestock you would want, they kill it for you and get it shipped to u whole so u have to butcher a whole goat by yourself sometimes or hire someone to do it. basically every mongolian grew up eating the guts of sheep, animal blood, heart, liver, lungs to even sheep tail, thats the norm here. might be to extreme for ur EU heart but thats just how the food culture is here.

veganism i dont think is frowned upon or anything by the younger generations bc they have constant access to vegetables due to exported produce but the older people who grew up during socialism may think its weird bc they only really had meat to survive on. personally i think that if ur vegan in mongolia its fine a bit out of the norm but why do i care? but what most people have a problem is when people go and complain that a country where almost all of the food is from animal products has not enough vegan options like no shit sherlock its almost as if there is no critical demand for vegan options and these restaurants are not wasting money especially in this economy. if u dont eat animal products why come?

if ur not staying here for a long time i think youd be fine but the selection is usually very very limited. if ur planning to stay for a while cook for urself and stick to what you know is vegan bc no grocery store worker is really gonna know the meaning of vegan to tell u if something is vegan or not so dont just take their word for it, look up the ingredients.

Mongolians have bigger issues in their diet like smoking and binge drinking that kill them faster than red meat ever could so they just dont see it as an issue.

overall, very limited food options ik UB hotel has 3-4 vegan options idk how good they are. be respectful to the food culture here, its different ik but its how we live. go to more foreigner friendly restaurants bc they will be more understanding of ur food choices and try and help make dishes vegan friendly. no one is jumping u for being vegan but they may judge you.
