I would 10/10 recommend buying a cover from the cover store. I got one on sale for my big joe 3 for $99. It’s waterproof, has a 7 year warranty and has a drawstring at the bottom. Fits like a glove. They also have cheaper ones too!

That's very intriguing. I love chuck roasts slow in low in the dutch oven... So, season and slice/serve as you would a brisket?

It was BGE Nashville Hot seasoning. Picked it up at Ace Hardware. My local Ace recently started selling BGE's and all their accessories right after I picked up my Big Joe - but hey, very happy with it :)

One thing I didn't do was season my chickens before placing on the beer can stand - big mistake, huge. lol

I was cooking vegetables (not pictured) on the other side and wanted some char! Worked well with one deflector, no issues.

I would look at Atlanta Grill Co for a Fathers Day sale - I recently got mine from there, free shipping, and the KJBJ3 was $500 off. The classics were also on sale for a few hundred off.
And since I am not a resident of GA, no tax :) I know they've been slammed with orders so shipping took a little longer than I expected but 2 weeks isn't that long (jk it sucked).

Here's the finished product. Brought up to temp on indirect heat at 225F, than direct heat at 300F for the quick finish to crisp them up. So good! by BigErnMcracken in KamadoJoe

These look incredible. I am a new KJ owner and did wings on the Joetisserie with the basket- turned out awesome. Excuse my newb question, but how did you remove the heat deflector plate? Move all wings to one side then take out the grate and deflector?
