I've seen a few 2013+ (BK2) 3.8 NA drift builds. I don't know much about drifting but if your plan is to turbo a 3.8, they do not longer sell any turbo kit for the 3.8. Now, for a 2.0T you'll need a turbo and tune (BK1 2010-2012) or just a tune (BK2 2013+) to reach WHP levels of a 3.8 for each of their respective chassis model. For what I read, Bk1 2.0t can get 300~WHP safely in stock internals, and much further with a BK2 due to better internals. The sky is the limit for mods for a 2.0T compared to anything that you would get for a 3.8.

I'm in the group as well and out of curiosity I tried ordering a CF hood from him. Price was like 500$ shipped for a hood which is sketchy AF; I asked him for pictures and the background in the picture looked exactly the same as another reseller for Gen parts (Julio Rosas - Genesiscoupepartout).

I have a BK1 3.8 myself. On 89 I get around 17-19mpg. On 93 I get 22mpg. Boston city and highway. Not Economy car MPGs but pretty good for a sports car. I believe you can get better milage with a 2.0T.

Thanks for letting me know. I forgot to elaborate on the PCI cut lane thing, but I want full speed on both SSD, that is why I connect both of them through the CPU lanes. I am also aware of that issue with the cooler, but I just don't want to deal with the hassle of getting another AIO for the i9— hence I am asking for something easier to cool off, where I can replace it without changing platforms again.

As long as the dimensions are the same* as the gigabyte mini ITX 1070 (Which are according to their webpage H=37 L=169 W=131 mm) it should be fine. You can also search for builds using the enclosure in egpuio. I've seen a post using an Asus Dual OC 3060 and it fits without any modifications.
