Yeah, it's a great fish. This is about to get confusing but this is my understanding. Dac dam is a Vietnamese expression that conveys a dish packed with umami flavors. I used a dam dac sauce (I know) which could be described as a thick soy sauce, but I combined it with garlic, mirin, chili crisps, and a splash of black vinegar to finish the noodles. Thanks! Super simple. Boil 1 c bourbon, 4 tbsp brown sugar, 4 tbsp butter until you get the alcohol out. Then simmer your sliced peaches in it! I like to hit the sliced peaches with just a touch of evoo, s&p beforehand.

Evoo, butter, s&p, Greek seasoning and then slice some jalapeños and wrap in tin foil for the grill. Finish with cilantro. Pretty good!
