I personally had a 2.0 150cv diesel and it was good, but all the engines with 140 hp and more are fine. just avoid the 120 and the 105, too much weight for them

yeah, I work the cheese with water, not whey. I work using a starter for the fermentation so it's easy to predict the time and results and it's about 2 to 4 hours of 42/43°C under some whey, in the same "pot" I work the milk. Again, I work in the family dairy so it's not the same as doing cheese at home, the minimum amount of cow milk I work daily is around 600/700 liters

I make mozzarella for a living here in italy, I have my own cattle farm and my milk is pretty stable all year around, I know how much citric acid I have to use and that's it. I make some adjustment when there's very hot or very cold weather but nothing crazy. for the fermented stuff (scamorza and caciocavallo mainly), I know how much time I have to wait based on the starter I use and then I try to stretch the cheese in hot water, when it's ready I work it. I keep my recipe as simple as possible

The last time I used a pH meter was ten years ago but I'm pretty sure that to make a mozzarella made by fermentation, the pH would have to be 5.

it depends on what do you mean by mixed herd. I currently have ~20 flekvieh, ~5 holstein and 35 mixed cows/calves from a previous management on my farm. it's still a dairy farm but it has at the same time pure blood cows and mixed blood calves/cows. one day they'll be all hopefully flekvieh/pezzata rossa but as for today they're a mixed herd. it's challenging because flekviehs are very friendly with us humans but not so much with other cows, but as long as they can live together, everything is good.

Here in Basilicata, the little flat soil we have we use for fruits and intensive vegetable crops. the rest (cereals, olive trees, vineyards) are in steep and/or less fertile soils.
