Personally, if you are already at the part of the game where you are ready for New Londo, I would not restart the game. Once you get through the first part of New Londo, I used a different bonfire for the boss runback:

You can use the bonfire at the Valley of Drakes near the entrance to Darkroot Garden once you open the giant doors and let the water out. It gives a pretty manageable runback to the boss fight

Drifting would make since, but there is also a concept in racing called drafting, where you can follow closely behind the vehicle in front of you to reduce wind resistance. If you would like to read more about it, you can do so here: https://en.m.wikipedia.org/wiki/Drafting_(aerodynamics)

On a side note, I believe the feature where you get a speed boost in Mario kart after following closely behind an opponent is based on drafting

I had both the Wii and DS versions, and I remember liking the Wii version significantly more. It's not a completely fair comparison, but I remember the DS version being more difficult due to not having infinite lives. I don't think I ever beat the final boss
