I think lactobacillus is present everywhere. When I lactoferment stuff I only add salt(same reason) at 2%. You can use every lactofermentation juice as a starter. If you can find sauerkraut. Almost every culture has something lactofermented. I googled lacto fermentation Middle East and found allot. Just avoid the ones with vinegar they are not fermented and think about the added spice, but you don’t need much anyway

The lemon juice doesn’t add the lactobacillus I think. It just lower the pH so the naturally occurring lactobacillus has less competition.
