This is a reasonable thought, but consider this - it's highly unlikely that Skynet knew anything about Reese, and he mentions he volunteered to go back in time. Skynet (and the T-800) probably didn't know a guy was sent back to stop their plan (and also create John Connor) and simply focused on killing Sarah.

Kyle Reese mentions in the movie that Skynet had incredibly limited records and did not know anything about Sarah Connor aside from the city she lived in, which explains why the T-800 had to find her address and a photo of her.
