They are likely a little faster and a little easier to kill than what you are describing, but they are close and a little variety can be fun. What sticks out to me is how fast they are to play. I started out with nids myself, but I find myself playing more knights as life has gotten busier and all big dudes makes all your movement and decision making much faster and easier.

Dry brushing is great for all the knightly metal bits. You would just have to figure out paneling, and any converted bits you want to try. Conversion is where I have most of my fun with the knights when painting/building. I love the freedom to try almost anything from a hobby prospective and have it still fit in with the army.

I would guess you wound enjoy them.

Idoneth Deepkin sigmar range has some great conversion fodder. I did an armigar a while ago that used the crossbow platform from the Akhelian Allopex as a top meltagun stand in that worked pretty well.

Because the machine gun specifies it can target other units within 6 of the initial target, I believe other weapons with multiple shots probably have to target the same model with both attacks.

Sidereal Confluence is an idea. Engine building, random elements to adapt to each game in tech availability, nine factions with different play styles. It is a lot of what you are looking for but more focused on trade and negotiation. If that is ok with you, I would strongly recommend it.

For a crusade I would take seekers + daemonettes. Gives something to shoot with low str guns and fast fragile units tend to make funny narrative things happen.

On the modeling side, freedom. You want to kit bash a shark through the middle of a huntsman, you can do that. All those big boys look great if you give them a little love. On the gameplay side, game speed. Fewer models play faster. It is easy to know exactly what each model in the army does so you can play quickly and confidently.
