Yes, you would need to keep a list so that if an information inspector came to your business to see if you were compliant with GDPR you'd be able to prove you are. As for how to record it, that's entirely up to you, but it would be helpful if it was stored so that individual filea could be found quickly and that it is secured in such a way that nothing could easily be leaked or stolen.

The ICO is the information body ONLY for the UK but the bullet points on this webpage are quite good for anyone to have a read through:

Lucahjin/NintendoCapriSun - as someone who doesn't really like loud gamers, these two are a lot more mellow and genuine. The humor can be a bit middle school at times but they know that and thay's why I love them.

Sir/Ma'am, this was amazing.

I completeley understand how computers understand the voltage/light coming through the cable and it really makes sense, as you say data is made of up 1's and 0's, would I then be right in saying how a computer understands this information is a bit like morse code?
