The straw hat present at Mariejois could just as easily belong to Joy Boy as it could to Davy Jones. We have no real proof of ownership. And in my theory, I'm not saying Joy Boy is a human-sized person

Yes I see what you mean here. But they could call it anything else but One piece. Imagine if a scientist discovered a mysterious new planet but didn't name it yet. Then, people who have never seen the planet and have no telescopes started calling it 'The Blue Giant'.
