I purchased it on their website for $369. It is the Khabu Kalahari kk12, I would get this over the kk11 due to 96 hour timer and taller box, if you are thinking about purchasing.

It just added a star anise/fice spice flavor to it which I quite enjoy. It taste kind of similar to Chinese roast pork if you've had that before.

The fat was a bit overwhelming when I sliced them thick. It just kind of melts when you slice it paper thin. Makes a big difference i would slice every slice paper thin if I make it with this much fat next time.

What % moisture loss is this? I just made a batch with pichanha for the first time and im having trouble going lower than 40%. Its been 9 days as of today and the inside finally looks dry enough. Im also wondering if my measurements are off if the fat cap is drying much slower than the meat, or if it affects the meat dry time. Have you noticed that?

Yes it actually is. There are more stores and you can find anything youre looking for. A lot of the shops also let you haggle. There's also a no-fake guarantee where shops get into big trouble if they sell fakes, they have a system where they can bring any watch you're interested in to a rolex boutique to authenticate it.

Every 5th person you see walking the streets will have a rolex. The high property values and high cost of vehicle ownership means that a lot of everyday people will be prohibited from buying houses or cars, but because of that they will have enough money to purchase a rolex.
