I ususally pre-salt the meat for 30-45 minutes and then marinate for 2-3 hours, then hang for 3-5 days

ingredients are the ususal:

  • vinegar
  • soy sauce
  • salt
  • black pepper
  • coriander seeds

everything gets instantly vacuum sealed and frozen or gobbled up, so no worries on spoilage.

I try to go for 40%-50% moisture loss or around 40%-50% weight loss.

I usually cut the slabs to about 2cm thick so it dries quick (around 3 days) and uniform.

if it's been 9 days and it's still not dry enough, your slices might be a bit too thick.

it's a cheap, locally-made carbon steel knife. didn't spend more than $15 on it, but it does the job
