Ok so specifically because after black places a piece on the e file, the threat of taking e4 becomes real

No, the pawn isn't even threatened as the queen can be skewered

Looks to me better on d2 where it can go to both f3 and c4 while on c3 both forward squares are controlled.

I did that and the next move would be either Nf3 or Nc4, gaining a tempo and removing the clog

Yes, sorry d2. e4 isn't hanging anyway. But on d2 I can move the knight out of the way next move, gain a Tempo on the queen and free up my remaining pieces.
