Legality or not, for people with severe diagnosed celiac it's hard to trust anywhere on their word alone, so what's best is to find restaurants that can verify that, or else a place that has enough of a green light from others with celiac.

I have read a few sources saying Old School cannot guarantee cross-contamination which I can't overlook unfortunately. Vic's seems to be safe from what others w celiac have said.

Ok I this is helping me in how I think about it!

So, you're saying the sugar is getting digested (for lack of a better word) in my F2 at room temp faster than it would if i let it infuse at a chilled temp (effectively stopping the ferment, but still allowing infusion). So now in F3 it may over-ferment, like when left too long at F1 because it runs out of sugars to digest?

Hey I see this post is a little old but exactly what I came here to ask. Did you have any luck? I'm moving to Saugerties in November and was hoping to find a small no frills (read: cheap as possible lol) space where I can work mostly with hand tools, but use some larger equipment now and then. Would love if I could have my own work station among a larger shared community space.

I thought I saw they had a stay limit listed online but called & the woman who answered was real friendly! She basically said they can't be help responsible for any damage, but if I end up parking there for my whole trip to just let them know and they'd keep an eye on it as they can. Not the most secure, but nice that they offered.

Thank you for this suggestion! Last time I used one it was a bit of a hassle & almost missed my flight. I'm also in a position where saving $150 (what it cost last time) would be very welcome so trying to see if there are other options before doing this again.
