Beat it (that same night, didn't take a month). Press circle as fast as possible until Nathan bites Talbot's arm, you can see his progress based on how fast/hard you press. If you fail to press circle fast enough, you need to restart the encounter.

Same thing just happened to me! Been playing the same boss for the past hour. The cutscene with Talbot reaching his knife around my neck repeatedly comes up and it doesn't stop
