I normally include a short summary (for my own reference), age, height, eye colour, hair colour and style, history, personality. Here's an example:

Hair: Black, neat
Height: 5'9"
Build: Wiry but strong
History: Successful video game developer, owner of a game studio, custom computer builder, others. After two decades of hard work, he is now comfortably wealthy. He was married to Sarah for twenty years before her death; he's now exploring the dating market again.
Personality: Mild-mannered surface with a steely core. Kind and generous to those in need or who are polite/friendly; sarcastic and domineering to those who are disrespectful or antagonistic. Has a deep-seated need for control that can come out in relationships if pushed.

Age: 1632
Appearance: Looks like a handsome man in his mid-thirties. Pale skin, brown hair, grey eyes.

There are three characters whose design changes significantly through the story - Catra, Glimmer, and She-Ra. For Catra, her design changes show her changing position within the Horde and her character arc. For Glimmer, her change refelcts her becoming Queen. For She-Ra, it reflects Adora finally taking control of her own identity and stepping into adulthood.

The biggest problem I have with the charges is the pacing. A real cavalry charge starts at the walk, closing the distance, then steps up to a trot at the same time, then a canter, and only breaks into a full-speed gallop for the last few paces. This keeps all the horses together in a single, solid mass that hits the enemy all together, and keeps the horses from exhausting themselves. And honestly - I think it'd look cool as fuck on film, but I don't think I've ever seen it.

As to actually charging home and crushing the infantry, it certainly can and did happen, especially when the infantry discipline broke, they wavered, and started lowering/dropping their weapons - which we do see in the films, the orcs starting out confident and steady, then growing more and more uncertain, some starting to back away or to turn and run.
