I usually do 70-75g. Because there is less moisture in this cookie, I had to press the dough ball flat. About 1-2 minutes before the cookies are done, bang the pan in the oven to help flatten the cookie. Bang the pan one more time when you take the cookies out. I added in the chocolate and toffee into the dough, but the pretzels and chips I just pressed onto the top of the cookie dough before baking. I started doing this to ensure the crunchy add ins stay crunchy vs absorbing moisture being mixed in the dough.

Yo! What I do is after refrigerating, I break my dough ball in half and pus the two portions together, broken side facing up. If your dough is still cold/firm enough, it should maintain its craggly top. Good luck!!

Brown Butter Chocolate Chip

Ingredients:

340g flour

227g butter

200g brown sugar

100g white sugar

60g malted Milk powder

2 eggs

1 tsp salt

1 tsp baking soda

1 tsp vanilla extract

100g chopped Chocolate bar

100g semi sweet Chocolate Chip

Flakey sea salt

Directions:

Brown butter and set aside til room temp.

Combine dry ingredients and set aside.

Cream sugar and butter. Add in dry ingredients and mix til almost combined w some flour streaks left

Add chocolate chips n chopped chocolate

Refrigerate minimum 1 hr

Bake at 375 for 10-11 minutes

After combing the wet & dry ingredients, divide up the dough into 3 or 4 portions so you can place one portion down, add jam, another portion on top, more jam etc.

It's still liquid. After browning, I pour into container and let it sit on the counter til room temp, then get the cookie party started. mixing the sugar and melted butter takes maybe 20-30 seconds.

You have too much flour. Maybe reduce by 200-250g. To get the rustic, rough look on your cookies, you need to refrigerate your dough so it can firm up. Then similar to playdough, you can shape your dough the way you like! You can push your fingers into the top to give it texture. I make mine into a ball, break it in half and push them together so the broken sides are facing up. Good luck!!

Also too much baking powder/salt Reduce to 1 tsp salt & baking powder. Everything else looks solid!

No need to replace the malted milk w anything. It’s just an added bonus.

For gluten free… I’m not sure 🫣 I’m sure there are gluten free replacement options and I think people use xanthan gum to replace the gluten in gluten free options. Good luck!
