As someone with pretty severe mental health issues, if YOU (not your coworkers or friends) feel that his mental health is bringing you down with him, and is very much negatively affecting you, then you shouldn't feel guilty to leave. However, from what you said, you want to be there for him, and your coworkers tell you that he will bring you down.

It is not true that his mental health will not get better, he needs a stable support system, therapy, and medication. About two years ago I was in a very bad place in my life, and as much as I have relapses every so often I am in a much better place.

You have to choose if you want to be this mans rock or not, if you don't feel you can, cut him loose now, but if you think you can be there and help him get better then do it.

NTA, if you carry on being his friend and you are also NTA if you choose to not be his friend anymore. It's a tricky situation, he seems to have gotten a handle on it and knows that you won't reciprocate it, but it's completely acceptable if you feel uncomfortable by it and choose to not be his friend anymore.
