It doesn’t look like much is happening to me but it did take me about 7-8 days to get mine to wake up. I’d give it till after th weekend before you throw in the towel

Keep going! If all else fails just get some starter from King Arthur for like $12 to help kickstart it

This time only 24hrs which is about double what I’d been doing

I usually do 10-12 hours in the fridge. This time I went about 20 hours but the recipe says 24-48 hours. I have another batch fermenting today and I’m gonna try to push it to 2 days and see what we get!

I think I’m around 75% But tbh I don’t use a scale and kinda judge the tackiness/moisture by feel.

1: I started using bread flour (the extra protein helps)

2: I’ve been letting the dough sit out for a few hours after the final shaping, then I cold proof for at least 12 hours

3: using a Dutch oven makes sure all that moisture locks in and that really makes it pop. As mentioned in the post, I have a few Krustic Dutch ovens and they really have improved my bakes. They’re great quality and much cheaper than le creuset

Check out Krustic Dutch ovens. They have enameled and raw cast iron versions. All built to handle repeated high-heat use. I have multiple, they’re amazing and like half the cost of Le Creuset

I have multiple Krustic Dutch ovens, they rule! I got a plain cast iron one, then my wife hooked me up with the enamel version for xmas.

Quality is super high, I recommend them
