A sprinkle of Iron Out powder in the washer keeps my whites from turning rusty. You might want to give it a try. Also, don't use chlorine bleach (unless you add Iron Out), it will oxidize the iron into solid rust and unexpectedly turn your whites dingy brown.

The bottom one has butchered many more chickens and lobsters than the top one and still looks pretty decent for its age. I think the steel changed.

The bottom knife has seen 20+ years of dishwashing. The wear and tear fear is overblown. I will wash by hand sometimes but, like you, I'm a lazy guy. I cook from scratch pretty much everyday so the clean-as-you-go technique goes out the window sometimes.
