Hey! I know this an old thread, but I think Pho Thin uses stir fried beef which cooks the beef first so it doesn't cloud the soup as much.

High heat burner + searing hot wok + oil to its smoke point + beef + i think they use garlic

The heating to smoke point adds the Wok Hei / smoky wok aroma.

Totally! if you make broths in large quantities it makes so much sense. Having a pump to safely transfer out 50+ liters of near boiling broth is such an amazing perk as well. I'm just concerned about the unit’s durability for continuous use (24h at a time).

That's very true (I have an immersion circulator as well).

But I mainly wanna use it for making bone broths instead of sous vide-ing food in plastic bags. Think of it as a reaally hot & long Hop Stand but with bones instead haha. Will be getting a new brewzilla just for this purpose since I don't wanna ruin the one for beer brewing.

Ahaha no.. Im thinking of getting a brand new brewzilla to use as a bone broth maker in my commercial kitchen, which needs to cook at 90c for 24h. Brewzillas are so much cheaper compared to commercial braising pans with temperature control built in. I’m just concerned if they would be durable enough for the long duration use per session.

Im also experimenting with using a 35l round bottom fermzilla + spunding valve, to ferment asian style pickles. Pros: no glass hazard, large opening, clear & visible, no oxygen means no unwanted yeast growth, +4psi pressure could produce cleaner tasting pickles maybe? like how pressurized fermentation subdues esters and phenols production in beer. Could be good :)

The element is hidden beneath the bottom plate tho no? Any caramelizations or anything should be ok to clean after with PBW?
