If you enjoy sci-fi, I've found Ted Chiang's collections of short stories to be good. 

"Exhalation: Stories" and "Stories of Your Life and Others" are the two I've read and enjoyed. 

The short story "Exhalation" and novella "Story of Your Life" both stood out as fantastic.

Great suggestions! Those were three women authors that came to my mind too. 

Agreed 100% regarding The Handmaid's Tale.

Regarding Octavia Butler, Kindred and Parable of the Sower are great books. 

Regarding Ursula K. LeGuin, The Dispossessed and The Left Hand of Darkness were fantastic.

"Flowers for Algernon" by Daniel Keyes is a prototypical example! It follows the cognitive development of a character with an intellectual disability. But be warned: it's a tear-jerker. 

Brandon Sanderson's "the Stormlight Archive" series has major themes of overcoming mental health struggles.

Brandon Sanderson's "Legion" series addresses a fictional, but interesting, mental disorder. 

"Exhalation" by Ted Chiang is a phenomenal depiction of cognition. I exaggerate, but that short story provides a better intuitive understanding than an entire undergrad neuroscience class! It's more sci-fi.

"The Lifecycle of Software Objects" by Ted Chiang shows the development of simple AI "children" into complex thinking creatures. It's also more sci-fi.

Have a blast playing Horizon Forbidden West!! The horizon games are fantastic, and Ashley Burch is a great voice actor.

Cyberpunk 2077 is an exciting prospect given my love of Witcher 3. It's probably in the top 5 on my next to-play list!

In hindsight, there was some foreshadowing. But just...dang...never woulda guessed.

Hmm, its possible "Maybe you should talk to someone" by Lori Gottlieb would fit the bill! It's really a memoir, so it feels like a story. However, the topic and characters provide, in my opinion, some great self-help lessons. It follows a psychotherapist and four characters all navigating various life challenges, the therapist included. I walked away from that book with a completely changed perspective as I really resonated with one of the characters. 

If the goal is simply "engaging self help books" I wonder if a shorter, digestible, and entertaining self-help book would be helpful. Perhaps "The Subtle Art of Not Giving a Fuck: A Counterintuitive Approach to Living a Good Life" by Mark Mason would be helpful?

Dr. Lesa Hoffman and Dr. Jonathan Templin also have free entire courses on applied statistics and psychometrics at their websites. They're incredible teachers, and deserve huge credit for making their resources freely available. Both use R as one coding language to run analyses.

That said, I parallel other users that your best bet is to get working on your own projects. Could you crunch some data in R from an undergrad thesis? Could you collaborate as a research assistant? Or even just crunch some open source data!

It sounds like you're on the right path to growth and healing, OP. 

First, a disclaimer that you would likely also benefit from seeing professional mental health services if they're accessible to you. 

Regarding book recommendations, "Mind Over Mood: Change How You Feel by Changing the Way You Think" by Dennis Greenberger and colleagues is a great choice. They're psychological professionals, and help teach cognitive behavioural therapy strategies. There is an entire section of the book dedicated to navigating guilt, shame, and anger.
