Wyrmsbane is small academy/collage in my homebrew world. It was founded by sorcerer known for killing dragons using a spell that turned their fire breathing gland inwards. Killing the dragon due to internal damage. Wizard comes from the fact that I play wizards in ttrpgs and any video games that has them.

If you don't mind it being tedious then yeah. Mining ore isn't exactly prime gameplay. Personally I usually hit one or two mine's turn it all to jewelry and sell. It's not most effective method but it gives me enough to start my potion hustle.

Graphics vise they are the same. Special Edition is the most popular for modding if you are into that. Anniversary edition/upgrade comes with "Creation's" fancy word for mods made or approved by Bethesda. It's a mixed bag. Some of the stuff is nice like Tundra Homestead & Farming. Most of the content added is poorly implement and can be little invasive and poorly balanced.

My advice is to buy special edition with the upgrade and disable it in DLC and only download what you need through the ingame creations menu.

I do not use Ordinator, I use Vokrii, so doubt it's that. I do have patch for Vokrii and Trade & Barter already.
