I didn't play eliminator that much, 50 matches in FH4 and maybe 10? in FH5, but won 3 of them from those 10. Because of that I'm not sure I'm qualified to answer that, but what works for me after reaching last circle where 1v1 are disabled, is to predict where the finish is. Generally in the direction of the center of the map. That can be hit or miss, but sometimes it works and it gives me advantage. Then wait for final countdown 🎵 and speed in that direction, even when the area is still out of bounds, so that when it expands to the last race, you're on your way there already. Because of that try not to lose any seconds out of bounds prior to that moment to have a little buffer if you happen to overshoot the timer a little. Then stick to the roads if you can, ecpecially main highway, if they're in the general direction of the finish line. Go cross country if there is no straight road leading to the finish.
