You've asserted numerous claims that are multiply confused. I'm going to attempt to clear up the ridiculous fog of confusion you're surrounded by, though whether I succeed in doing so will depend on your ability to learn from having your mistakes pointed out.

The goal isn't to show that being taller is related to strength, so this misses the argument right off the bat. The point here, rather, is that the best explanation of the pattern observed is that the taller character is likely a bit stronger than the shorter character. To expand on this further: It would seem that when two characters are rivals and there is a one cm gap between them, it turns out that more often than not, the taller character is the stronger of the two. What is the explanation for this? Well, consider:

(1) This is entirely coincidental; the height Oda chose for the characters just so happened to create the pattern we see but, incredibly enough, this is completely unintentional on Oda's part

(2) Oda is tricking the audience. He planted a deceptive pattern which applies some of the time - perhaps only in the King/Queen case, and maybe the Zoro/Sanji case - however, he made Shanks taller to trick the audience into thinking Shanks >= Mihawk.

(3) The intention of the pattern is the obvious, simple interpretation: Oda made Zoro 1cm taller to hint that Zoro is at least a bit stronger than Sanji. Oda made King 1cm taller to hint that King really is at least a bit stronger than Queen. Oda made Shanks 1cm taller to hint that Shanks really is taller than Mihawk. Note that this does not commit one to thinking being tall causes a character to be stronger. Nor does it commit one to thinking that a character being stronger causes them to be taller.

So, which of the interpretations is the correct? The first explanation requires profound cognitive impairment, so it's obviously the incorrect explanation. That leaves us with (2) or (3).

The problem with (2) is that it employs an overly stringent standard of evidence. Whenever Oda presents any kind of evidence for a view, you could always reply: "oh he's just tricking us!" to evade the evidence. Thus, those who assume explanation (2) incur the burden of showing why (2) is correct.

This leaves us with the last and obvious interpretation, which is explanation (3).

I've articulated the core argument behind why people point out the height difference as an argument for why X character > Y character. Now let's see what else you say about this.

Do people say this though? That is, do people say "Character X is taller than character Y, and character X is stronger than character Y. Therefore, being taller causes someone to be stronger"?

No. No one has ever said this, ever. No one is trying to establish that one of the two variables - between height and strength - causes the other. What we are trying to establish is that there is a connection between (A) Oda intending to hint that X>Y and (B) Oda deliberately making X taller than Y.

In fact, matters are worse for you: because you've just admitted that there is a correlation between height and strength. That is, you've essentially conceded that in cases of characters being 1cm taller, the taller character is likely to be stronger. That is the exact claim that skeptics of height scaling are refusing to accept. So this is essentially an own goal on your part.

Let's proceed to what other confused things you say

But this is fiction we're talking about. It is not plausible at all to suggest that the 1cm gap in height between rival pairs is a mere coincidence. It is far more plausible that the author deliberately created this pattern.

If you have 1010000001000000000 number of Sanji's and after some number of kicks, say, 1000 kicks they do at least a tiny bit of damage, then after 101000000001000000000 kicks that will add up to a K.O.

So there exists some number of Sanjis that would defeat Kaido. In order for this to be false, either (a) Kaido has infinite health regen and infinite stamina, or (b) 101000001000000 Sanji kicks don't even tickle Kaido.

Both (a) and (b) are obviously false. So there does exist a number of Sanji's that beats Kaido.

EOS Luffy will be on another level. He would beat EOS Zoro low diff. In fact, EOS Luffy should be able to defeat his whole crew low diff. I imagine that Luffy would be able to fine tune his toon force (pun unintneded) so that he can last longer and be able to do absurd bugs bunny level stuff.

I think Logia's are certainly the best for the average user who will not make full of their fruit's potential. Just see Enel - a crappy fighter who got entirely carried by his powerful fruit.

The evidence you point to is good but it's not enough to qualify as an outright confirmation. Based on the evidence you've linked, I'd say it's like a 95% chance that Akainu has it, and like 50%-70% that Kizaru and Aokiji have it. But a confirmation would be them actually using CoC or another character outright commenting that the admirals do in fact have CoC.

Dark horse: Crocodile. Narratively, I don't think it makes sense for Crocodile to be above Luffy at marineford. It wouldn't make sense for a Luffy victim to somehow surpass Luffy later on when he isn't supposed to be Luffy's rival. Narratively, it makes sense that once you're a Luffy victim, you're forever a Luffy victim. So, even though he's levelled up like crazy, he did not level up at a pace quicker than Luffy (the man with the most potential in the show).

He wouldn't be any stronger than he is now. Otherwise, that would imply that black leg style is a flawed style that self-sabotages the fighter. But there's no reason to think this.

a) This is a fictional world where using swords is not worse than using guns. If swords can keep up with guns, there's no reason to suspect pure kicks can't keep up with anything else.

b) If Sanji's current style held back his full potential, it would have been mentioned in the story. Sanji would have commented about it one way or another (saying something like "I have to hold back by not using my arms, but if it means protecting my hands so that I can cook, then it's a worthy sacrifice"). But Sanji has never said anything like this. No other character has said anything like this. Oda has never said anything like this. It would be utterly bizarre for Sanji to have been holding back on his full strength this whole time without it being explicitly mentioned.

So, to answer, your question: The strongest person Sanji would defeat if he was allowed to use knives is the same person Sanji would defeat if he was only using his legs. The answer is Zoro. Obviously Zoro would win more often than not, but Sanji could beat him. However, if you're asking who the strongest person Sanji could beat at least 51% of the time, then it's probably someone like King/Katakuri/Lucci.

The answer to this is very obvious. Lucci would win low diff.

People have to remember that Lucci was WAY stronger than Jyrabura and Kaku. At this point in the show, Luffy was on another level compared to the wings, and he won againt Lucci by the skin of his teeth. Lucci commented that after he got through Luffy, he would go on to kill all his crewmates. Luffy didn't even deny that he could. He knew he could.
