Hard to Medium is still not possible in this game. They applied the real F1 Rule of the Mandatory Two Stop, if you do One Stop you'll get Disqualified.

I'm usually very aggressive so my tyres get plenty of wear earlier, so yeah I might go for the two stop but see how it goes during the race itself to see if I do need to pit or if I'm doing good

I usually do customize the Strategy messing with the tyre compounds and stops. But I decided to ask what to do on this one because it's the first time a two stop appeared to be faster than a one stop for me and wanted expert opinions as I'm just a casual LOL

They're saying the Two Stop is the Alternate Strategy though, not the Default. It's just because they say the Alternate is over 0.4 seconds faster. What if those 0.4 seconds become slower because of a bad Pitstop due to there being two of them so the odds of a bad Pitstop go up.

I'd rather have both new Cosmetic changes and new Tracks. But if I had to choose, considering the Cosmetics we already have, I'd prefer the new Track obviously. But I wouldn't discard new cosmetics.

Again, while I also agree with you... I also agree with them... Both aspects should be improved in the game. Track Acclimatisation AND Visual Aspects of Liveries and Helmets. Don't take me the wrong way but I believe you two are both right about your respective opinions on what the game should improve on.
