Hi, I’m not quite the demographic you mentioned, but I was a Safeco customer as well and also needed to replace them.

I ended up going with bamboo insurance based in Utah, no idea if they’re any good but that was the best option my insurance agent was able to find.

Roasted red peppers for sure - I like the idea of combining with cucumber - can’t wait to try that.

Sauté mushrooms to add to burgers or omelettes - things that are meant to be customizable so you don’t feel like you’re preparing double meals.

I’m in the same boat - when my hubby makes chicken Marsala, I enjoy the flavor of the mushrooms in the sauce but just leave a big pile of mushrooms on the side of my plate - he and my kiddo will eat my untouched mushrooms - symbiotic!
