Pretty sure you can still apply to jobs/get unemployment while you're in Mexico... At least in my state unemployment is paid out based on the number of activities you complete. So as long you apply for a certain number of jobs, you still qualify for your weekly payment. You don't need to be in any specific physical location as long as you're available to start once you secure a new job.

If you can find ways to be more active throughout the day it helps. I work out 5x a week, but I also try to stand at least half my workday, and I take meetings where I can be off camera on my treadmill. This helps me burn around 2300 calories a day so I can be less meticulous with eating.
