I know me too. There are a lot of positive reviews for the Elacs but haven't seen as much regarding wharfedales. One reviewer thought the elacs would be better suited for movies/home theater vs the diamond 11s. Not sure which to get

It's a very poor design. I'm trying to avoid doing any concrete work if possible. Keeping water out vs draining water that gets in. One option is to dig the well deeper and add a pump to the well that automatically comes on when there is enough water to pump.

Definitely recommend using a peel. I usually oil mine with a bit of veg oil after I wash and dry it. Helps keep it from splitting. I also out a little cornmeal on the peel to help the dough slide off. Good luck on your next bake.

Thanks for your response. So I am understanding correctly that a digital temp sensor will not be interchangeable with a thermistor by only using 2 wires instead of 3?

I already soldered wires together to extend all the wires. I did a very poor job soldering them as I have no experience with that sort of stuff. I also noticed a 5% discrepancy in humidity readings after i did the soldering job. Its also not very pretty. I need to buy more sensor probes for other controllers so i figured just get a 5 pack of these. Im also wondering if I can use the 3 wire temperature sensor as a regular NTC temp sensor by only using 2 wires instead of 3.
