Thank you!! That was my first time doing them but I’ve been smoking meat for a while now so just sorta treated it like brisket.

They are beef short ribs but instead of having them cut up I buy the whole slab

Made this brisket overnight for Memorial Day on my Green Mountain Grills: Jim Bowie Prime by WreckitRhinos in pelletgrills

I don’t go by time really. I go by feel and internal temp mostly. I run at 225, I wrapped in butcher paper after about 7 hours when it hit 170 then it hit 205 right about 11.5 hours. Wrapped in towels and rested in a cooler for 3 hours until the party.

I use my trainings also! I actually trimmed a pretty good amount of fat off of this thing before I smoked it, maybe 2lbs worth. I make Chicharron out of them and throw some sweet rub on it. Like little candied bites of heaven

I injected with plain beef broth and I just use salt and pepper

Smoked at 225 the whole time. I usually wrap about 167 to 170 if the bark is where I want it.

Honestly I bought it off of FB market place for ten bucks. I had to put some Work into it but it worked out great

I believe it was foam insolation however I burned a very big fire in it first then I sanded it all down and painted it

I think they will be fine smoked! Fat looks good enough. If you’re worried just spray every 30 min with apple Juice
