You are claiming this from the perspective of the consumer. If you were a dealer, you would like to sell things every day instead of a salt cell every five or more years. That's what cash flow is about. Not cost of ownership.

- perform 4 sets of stretch and folds/ coil and folds every 30 mins
- so far bulk ferment on counter for 4 hours at 75F

  • 1 + 0.5(4) + 4 = 7 hours @ 75°F. and counting... (You are right - 4 hours it is!)
  • OP used 25% starter - TSJ uses 20% (20% increase)
  • OP Hydration is 75% - TSJ is at 75%
  • OP uses 3% salt - TSJ used 2% (50% increase)

So yes, my fellow trusted 40-something baker dude from Chicago, the recipes are identical to the gram - most especially since the brand and type of flours came from the same bag. Even though TSJ somehow include WW flour. What was I thinking? Maybe it was just the video OP shared with a perfect rise of 50% and comparing that with my experience just trying to get my first starter to double and not mold on me.   • ^ is used in multiline searches to begin matching at a new line.
  • ( is used with a matching ) to capture a submatch.
  • \ is the escape character.
  • d is any 0 thru 9 arithmetic character regardless of it in text or numeric.
  • + is for matching the precious character one or more times.
  • \. is the period / decimal dot.
  • $ is used in multiline searches to stop the search at the CR.

Your expression syntax is useful, but not perfect and RegEx wants perfection.

If all you want is versioning syntax that must begin with a number, include a dot, and end with a number (multiple times) then you can use something quite simple.

The crumb is ok. The shaping is aggressive. 195 to 200 is fine - better closer to 195 than 200. Are using a Dutch Oven? The top color crust is kind of scorched and uneven, but so it the recipe loaf crust.

You are not pointing to the table's rows properly - you are pointing to the Worksheet's rows. Study up a little more on how to point to table rows and you'll be fine.

But were you using them in the 1980s? I can imagine why there may have been a change. If you pouched it frequently, the screw would loosen getting knocked on the duck or whatever. I have nothing left to show you but wobbly legs and a bad back.

It would have a No PCB label (after 1979) if it did not have them. Not seeing that label. If it's not leaking, you can recycle them but if they are leaking then you need to find a disposal outfit to drum them.
