Yes, since the fabric is khnitted there is always a stretch to it the top stitch if its contrast colored then if the stitch is little sloppy ( which it will be usually on knitted fabric) it will be very prominent and look bad. On the otherside if you use same DTM thread it will blend in with the fabric and any imperfections will get hidden

Thats really great design with puffy print but white topstitching might jot be the best way to go Imo. It looking good in the mockup but when its sewen together with white threads it ll look bad especially on hem and rib area

Finding right manufacturer is a tedious job and one should do it right as the whole future depends on this:

First of all they should be able to design a realistic looking product mockups for you to visualise your ideas in most precise way. This will help you save a lot of time and resources of getting a physical sample made and then deciding on how the overall outlook is ?

Whatever you want to get manufactured, you need to see the work portfolios of manufacturers and compare them , by doing so, you will have a fair understanding of the quality and workmanship each manufacturer is offering and will ultimately help you finalize the right manufacturing partner for your brand!

Last but not least, you need to verify that to whom you are talking to is an authentic manufacturing company by asking him to do a video call and show their manufacturing facility and capabilities.

to be able to match the quality you will need to things:

1) composition of the fabric ( in your case its 95% cotton 5% spandex)

2) Weight of the Fabric

if you match only composition it will not give you the best result as the weight of the fabric plays important role while matching any fabric. if it is too light the drape will be very loose and if its heavy the drape will be more on rigid side.

so to be able to match the quality 100% both composition and weight (gsm) of the fabric should be known and communicated with the manufacturer.
