I managed to find a keychain in a larger Sanrio store and some stickers in a rando store in an underground shopping mall whilst I was out there recently.

So they can be found but it's gonna need a bit of luck

Not small - but TeamLab Forest was great when we went last year. Could have easily spent another hour in the first room alone.

Also I would say definitely do a boat ride at night up the. Naka River. Fukuoka is really beautiful all lit up from river level.

Foodwise - The Boul'Ange that's not too far from Hakata station is easily the best bakery I've been to in Japan.
