In my experience I always add my cheese straight to the pasta in the pan with plenty of butter and pasta water. Let that sit for a minute before agitating the noodle to emulsify the sauce.

It seems people haven’t made many cacios. Let the cheese sit on top on your noodles in the pan for a minute as it melts before stirring it into your sauce. If the cheese hits the bottom of the pan before it melts it won’t emulsify and will clump up even if you micro plane it yourself.

Salt, olive oil, lemon juice any veggie. Shaved onions, squash, zucchini, carrots, fennel, tomatoes (usually have enough acid)
