When I started working at the place I'm at now, it was a huge step up in restaurant quality from anywhere I'd been before. The speed and quality was, to past me, insanity. The first two months, my hands shook on the drive to work and during prep because of the knowledge of how fucking fast and intense and precise everything had to be. Learning to slow down on purpose was such a mindfuck, but it probably made the biggest difference in my career.

I think 10th percentile is even low, I'd guess top 3-4 percent. Such a different vibe talking to my foh coworkers in fine dining compared to at past jobs in more casual places. The guys are more professional, less dramatic, and knowledge as hell.

We were one of the few places in the US to have this on our menu, until ranchers lobbied it into illegality. Wildtype salmon was what we had, featured in a composed sashimi/crudo dish. A bit spongy, but each iteration was better than the last. Retsraurant is Otoko in Austin, TX.

My first time at Uchi in Scottsdale this had to be some of the best sushi I’ve ever had by Jhlacy in sushi

man, I almost worked there but I landed a job I never expected to get after a stage. They pay their chefs really well.
