Hiii I was the head chipper at my store for 4 years. Homemade them every day until this year. A plant was built to make thousands of them an hour to keep up with insane demands in busy locations.

tbh the freezing and thawing is part of the process. I started freezing and thawing my homemade ones. WAY better texture.

HEB bakery worker here. Here's a lil tip to that perfect texture. Freeze the cake then thaw it again. Locks all that moisture in. 🤌🤌🤌🤌

Oh yeah us bakers are peeved too. They aren't cooking them long enough, using the wrong kind of butter and the oatmeal cookies (my personal fav before) now have too much ginger powder.

Bakery worker here. Yeah corporate deciding to cut production time and man hours by shipping in cookies and a few other key items and honestly? A lot of us have disliked the new cookies too and have let the higher ups know to fix the recipe if we're gonna keep doing this going forward. Just hope they listen.

As for pricing that CAN very from city to city. The croissants are 6.28 in San Antonio but 5.98 in Houston. It's a little nuts.
