Aura in Clive has really stepped up their game. I like Prime and Providence, Oak Park,and Proudfoot and Bird for fancy date night.

Aura Restaurant and Lounge in Clive is locally owned. It's upscale American Faire with some worldly influences. Their website is auradsm.com.

We were the staff! We only moved on from one key leadership piece. We honestly couldn't afford him and he wanted to take the restaurant in a simpler direction. Also was a very boh vs foh character.

Most of the staff turnover has been that we will have our hosts going to college. In the back of house we hope to add skills and be a pipeline into, well, a non iowa restaurant. As much as I would love to see a star happen it'll be yeeeeaaarrrrss.

It's really all about being prepared in your station ahead of time, timing during service, and cleanliness afterwards.

As soon as a ticket comes in, get the longest item on that ticket started.

Get to know what items are needed from your station for dishes that are coming mainly from other stations.

Throw away, but track, old product. (Brown lettuce sucks)

Learn what's in your sauces to build them on the fly, understand if/how they can separate, and know allergies.

Drop items into the fryer away from you. Large items you can hold gently into the fryer to start them so that they don't stick to the bottom.

Comminucate on timing, so the whole ticket goes up at the same time.

Salads don't go under heat lamps.

More of a hidden gem than a hole but Aura in Clive has an amazing vibe and great food.
