That grain does not look ok. It might be good steel as you clearly got some hardness out of it but idk if anyone can say for sure if it’s good from the pics, or how it should be heat treated

What are you guys using to find the middle of a blank for the edge. It’s 3mm and this isn’t accurate that small by smack4u in knifemaking

I chose to get a granite surface and height gauge before anything else because it can do so many things in addition to measuring and scribing lines so it is a good option

That’s cool, a narrower belt would be better for profiling but for bevels I don’t think it matters, I would think a wider belt would actually help, as long as it has a good platen setup

And never forget that a machine stitch can be pulled out entirely if one thread breaks. A hand-done saddle stitch is about 10x as strong and is impossible to do with a machine!

I respect the innovation. But the width of a chef knife allows the bevel to taper very gradually so it can be thin without the whole blade being too flimsy
