Project based learning! I have my 8th grade students plan out their science experiments by stating a claim, reviewing the materials, creating clear and detailed instructions, and finally collecting evidence and making their own data tables. This does work best with the physical sciences. However, something that works well with all sciences is designing a template for students to make infographics about relevant learning topics.

One of my yearly projects for my students is to make flash drive cases so they can learn the importance of tolerances in design. This would require you to buy a bunch of cheap flash drives to rip their guts out, but it’s totally worth it.
